As much as I miss travel and going to new places, staying home is not entirely without its benefits. I found a new rhythm in life that is more peaceful and quiet, discovered new hobbies and rediscovered old ones, like baking for example. Though I’ve always enjoyed it, now baking is something we do as a family, which I think makes it even more fun. This particular recipe was given to me by a friend, and it quickly became one of our favorites. Super easy, it literally takes 15 minutes to make these snickerdoodles, and they are vegan, grain-free and dairy free! Since we’ve been spending so much time in the kitchen as of late, we’ve made some cute additions. I think you’ve already seen our SMEG blender, but the Padova pans are fairly new and we absolutely love them. The Skagerak towel holder and board are also relatively new and we simply cannot get enough of this Danish brand. Though the pieces are fairly inexpensive they are incredibly well made and durable. In addition, Skagerak makes sustainable and ethical products, something that’s really important to us.
Here’s the cookie recipe! Combine your dry ingredients in a medium bowl. Separately, whisk together all wet ingredients and stir into the dry ingredients. Take approximately 1 tablespoon of batter, roll into a ball, and coat it in the topping mix. Place balls of batter onto greased and parchment lined baking pans and lightly press down. Sprinkle with the date/coconut sugar and cinnamon combination. Bake for 8-10 minutes, until just golden brown around the edges. Remove from the oven and place the cookies on a cooling rack.
Ingredients (makes 2 dozen cookies):
3 cups of almond flour
1/2 teaspoon of Himalayan pink salt
1/2 teaspoon of baking soda
1/4 teaspoon of cinnamon
1/2 cup coconut oil, melted
1/2 cup of maple syrup
1 tablespoon of vanilla extract
Topping mix:
1/4 cup date sugar or coconut sugar
2 teaspoons of cinnamon
I am downright obsessed with these espresso cups! So chic and elegant, something about having your morning espresso from one of these cups makes the process so much more enjoyable. By the way, they are brand new, I just got them on Verishop and now, I’m thinking of getting the bigger size of these as well. I just love the simplicity of the design, and that certain understated elegance!
